Vermicelli Tomato Carbonara..........Peggy Will


 

Ingredients:
 
8 slices bacon
1/4 cup chopped onion
1 clove garlic - minced
3 1/2 cups (28 oz. can) tomatoes with liquid - cut in small pieces
6 fresh basil leaves or 1 tbl. dried basil
1 tsp. salt
1 (16 oz.) package vermicelli
 

Instructions:
 
Fry bacon in large skillet until crisp - drain on paper towel - reserve drippings. Crumble bacon and set aside.
Stir onion and garlic in bacon drippings - cook until onion is tender.
Add tomatoes with liquid, basil and salt.
Bring to a boil at medium heat.
Reduce heat and simmer 20 minutes - stirring occasionally.
Cook vermicelli according to package - drain.
Add tomato mixture and crumbled bacon to vermicelli - toss lightly.
