Turkey Stuffing..........Mom Franzen

 

Ingredients:
 

                                    4 pounds          12 pounds        20 pounds

 

sausage                       1/3 lb.                1 lb.                  2 lbs.

bread cubes                 4 cups              12 cups            20 cups

minced onion              1/4 cup             3/4 cups           1 1/4 cups

chopped celery           1/2 cup             1 1/2 cups         2 1/2 cups

salt                              1/2 tsp.               3/4 tsp.            1 tsp.

pepper                         1/4 tsp.             1 tsp.                 1 1/2 tsp.

poultry seasoning       1 TBL.              1 1/2 TBL.         2 TBL.

Instructions:
 

Brown sausage - make well in center.
Cook onion.
Mix bread, celery and seasonings.
Add sausage and onion.
Boil water in sausage pan - add enough water that stuffing sticks together.
Stuff and truss bird.
Brush with melted shortening.
Cover with 1 layer of cheesecloth.
Lay handles of turkey lifter over cheesecloth.

 

NOTE:

For stuffing, 2 bags Schwebels (12 oz.) 1 bag = 12 cups or 2 loaves Wonder or Martin Bread.
