Toasted Coconut Macaroons..........Lesley Pappa

 

Ingredients:
 
2 egg whites
1/4 cup sugar
4 cups grated coconut
1/2 tsp. almond extract or 1 tsp. vanilla extract
1/8 tsp. salt

 

Instructions:
 

Whip egg whites and sugar together.
Mix in rest of ingredients.
Shape into small balls. Flatten slightly.
Place on greased cookie sheet.
Let stand 1/2 hour.

Bake on top rack at 325 degrees for 25-30 minutes or until lightly browned.

Makes about 1 1/2 dozen.
