Stuffed Cheese Shells..........Lesley Pappa

 
Ingredients:
 

1 (12oz.) box jumbo shells
4 cups (2lbs.) ricotta cheese
2 cups (8oz.) Mozzarella cheese
3/4 cup grated Parmesan cheese
2 eggs
1 Tbl. chopped fresh parsley
3/4 tsp. oregano
1/2 tsp. salt

1/4 tsp. pepper

4 cups spaghetti sauce

Instructions:

 

Cook jumbo shells per package directions, drain.
Combine cheese, eggs, parsley, oregano, salt and pepper.
Fill each shell with about 2 tablespoons of cheese mixture.
Spread 1 cup of sauce on bottom of a 13x9 inch baking pan.
Place shells open side up in a single layer in the pan, cover with remaining 3 cups sauce.
Sprinkle with additional Parmesan cheese if desired.
Cover with aluminum foil, bake at 350 degrees about 30 minutes or until hot and bubbly.

Fills about 36 shells.
