Struffoli - Christmas Honey Balls..........Mom (Fran) Pappa

 

Ingredients:
 
6 eggs - beaten
1/2 tsp. vanilla
1/4 tsp. salt
3 cups flour
1 cup honey
1 tbl. sugar
cooking oil
small colored candy sprinkles

Instructions:
 
In large bowl mix eggs, vanilla and salt.
Add additional flour as needed to get smooth texture.
Knead dough until soft.
Cut dough into strips and roll strips into pencil like thickness.
Cut strips into 1/4 - 1/2 inch pieces.
Heat about 5 inches of oil in large pot.
Fry strips about 3-5 minutes or to golden brown. Remove before they get hard.
Drain on paper towels and put into bowls.
Cook honey and sugar in small pot for 5 minutes.
Pour over honey balls and mix well.
Cool honey balls in refrigerator.
Add sprinkles and serve.
