Ingredients:
1 1/2 lbs. sweet sausage 5 medium potatoes -sliced as fried would be olive
oil 1 clove garlic - chopped 1/2 medium onion -chopped
Instructions:
Cut sausage into 1 inch links. Pierce with fork. Cook in olive oil until
brown. remove from oil and put aside. Drain all but 3 tablespoons of oil from pan. Add oil if necessary. Brown onion
and garlic in oil over low heat. Put aside when done. Add potatoes to oil (add oil if necessary to get 3 tablespoons). Cook
potatoes on low to medium heat uncovered until soft. Add onion, garlic and sausage to potatoes. Cook covered for 15-20
minutes adding oil to keep moist.
