Russian Tea Cakes - Butterballs..........Mom Franzen

 

Ingredients:
 

1 cup butter - softened
1/2 cup sifted confectioners sugar
1 tsp. vanilla extract
2 1/4 cups sifted flour
1/4 tsp. salt

3/4 cup coarsely chopped nuts

Confectioners sugar

Instructions:

 

In a stand mixer, mix together butter, 1/2 cup confectioners sugar, 1 tsp. vanilla.
Sift together flour and salt and mix in stand mixer.

Mix in nuts.
Chill dough for 90 minutes.
Roll dough into 1 inch balls.
Place 2 1/2 inches apart on un-greased cookie sheet.

Bake at 400 degrees for 12 minutes.

While still warm, roll in bowl of confectioners sugar.

Let cool 1/2 hour and roll again in sugar.

 

NOTE: Bake on higher racks to prevent bottoms from burning
