Ingredients:
8 oz. dry
rice 1 qt. milk (4cups) 1/2 tsp salt 1 cup sugar
1 lemon rind 1/4 lb. margarine 6 eggs Instructions:
Cook and
drain rice per rice instructions. In large pot mix rice,
salt and milk. Bring mixture to a boil. Add sugar,
lemon rind, vanilla and margarine. Cook over medium heat
until thickened (about 45 minutes) stirring occasionally.
Remove from heat and let cool in refrigerator for 1 hour. Beat eggs
and stir into mixture. Pour into greased square 8x8 pan. Bake 15 minutes at 400 degrees then 45 minutes at 350 degrees.
