Ingredients:
Red
potatoes. Hard boiled eggs. Celery - chopped.
Onion - chopped.
Hellman mayonnaise.
Salt.
Pepper.
Instructions:
Boil
potatoes. (I boil the potatoes the night before and
refrigerate. If some overcook they will be firm the next
day). Peel potatoes.
Coarsely chop eggs (I only use half of the yolks. I use a
lot of eggs).
Mix all ingredients
together. Sprinkle paprika on top for decoration.
Notes:
If
making 5 lb bag of potatoes:
10-12
hard boiled eggs. 3-4 stalks celery - chopped.
1/2 onion - chopped
1 1/2
cups Hellman's mayonnaise (add 1/2 cups as needed for your
preference). Salt and pepper as preferred.
