Pie Dough..........Lesley Pappa

 

Ingredients:
 
2 1/2 cups flour
pinch of salt
16 TBL. (2 sticks) unsalted butter - cubed
6-8 TBL.  ice cold water
 
Instructions:
 

Mix flour and salt.
Add cubed cold butter.
Toss in flour until covered..
Squeeze butter cubes into flour until size of half walnuts or a nickel.
Make a well in flour.
Add 1/2 of the ice water.

Mix gently.

Add rest of water, checking to see if dough holds together when squeezed.
Dump dough on counter.
Knead dough a little until it comes together.

Divide in half, mold into round discs.

Cover tightly with plastic wrap and flatted into circles.

Refrigerate for 45 minutes.

Roll onto floured surface, keep turning dough.
