1 Tbl butter
1/2 medium onion - chopped
1/4 cup melted
butter
1/4 cup flour
2 cups (1 pint) half-and-half
3
cups chicken broth
1/2 lb. fresh broccoli - cut small
1
cup carrots - julienne or grated
Salt and pepper to taste
8 oz. grated sharp cheddar
Instructions:
Sauté onion
in 1 Tbl butter - set aside.
Whisk melted butter and
flour over medium heat for 3 minutes.
Stir constantly
while adding half-and-half.
Add chicken broth while
continually whisking.
Simmer 20 minutes.
Add broccoli,
carrots and onions.
Simmer 20 minutes.
Add salt and
pepper.
Stir in cheddar cheese until well blended.
Serve with crusty bread.
Note: If soup is too thick
for you, add more chicken broth.
