Homemade Rice and Roni..........Peggy Will


 

Ingredients:
 
1 tbl. oil
1/2 lb. pasta - vermicelli or spaghetti
1 cup long grain rice
1 small onion - chopped
1 tbl. fresh parsley - or 1 tsp. dry
2 cups chicken or beef broth
 
 
 

Instructions:
 
Put oil in pot.
Break pasta in 1/2 or 1 inch pieces.
On medium heat, add noodles to oil - stir in until slightly brown.
Add rice, onion, parsley and broth.
Stir mixture - cover tightly.
Cook as you would with regular rice - around 20 minutes.
Fluff rice with fork and serve.
