Ingredients:
1/3 Batch
3 cups
vegetable oil
1 cup vegetable oil 4 cups flour
1 1/3 cups flour 1/3 cup granulated sugar
2 Tbsp. granulated sugar
2 tsp. baking powder
3/4 tsp. baking powder 1/2 tsp. salt
1/4 tsp. salt 2 1/2 cups milk
6.6 oz. milk
3 large eggs
1 large egg
confectioners
sugar for dusting

Instructions:
In a deep
medium skillet, heat the oil to 350-375 degrees. (I use an
electric skillet). In a large bowl, whisk flour,
granulated sugar, baking powder and salt. Make a well in
the center and add the milk and eggs and whisk until smooth.
Pour batter into a funnel cake funnel. Pour about 1 cup
of batter into oil in a circle form. Cook until golden
brown on the bottom. This takes about a minute or so.
Using tongs, turn the cake over and cook the other side
until golden brown. Transfer the funnel cake to paper
towels and drain briefly. Dust the funnel cakes with
confectioners sugar and serve hot.
