English Muffin Bread..........Lou Pappa

 

Ingredients:
 
cornmeal
5 cups bread flour
2 packages active dry yeast
1 Tbl.  sugar
2 tsp salt
1 tsp baking soda
3 cups whole milk - heated to 115 degrees
 
Instructions:
 
Grease 2 8 1/2 x 4 1/2 inch loaf pans and dust with cornmeal.
In large bowl combine flour, yeast, sugar, salt and baking soda.
Stir in hot milk until combined, about 1 minute.
Cover dough with greased plastic wrap and let it rise in a warm place about 45 minutes.
Stir dough and divide between loaf pans, pushing into corners with greased rubber spatula.
Cover pans with greased plastic wrap and let rise in warm place about 45 minutes.
Adjust oven rack to middle of oven and heat to 375 degrees..
Discard plastic and transfer pans to oven.
Bake for 30 minutes , rotating and switching pans location half-way through.
Turn bread onto wire rack and let cool about 1 hour.
