Chocolate Zucchini Bread..........Lou Pappa

 

Ingredients:
 

2 1/2 cups flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. ground cinnamon
3 large eggs room temperature
1 cup canola oil
2 cups sugar
1 TBL. vanilla extract

1/2 cup baking cocoa
2 cups shredded peeled grated zucchini
 

Instructions:
 
Grease and flour 2 8x4 bread pans.
In a large bowl, beat sugar, oil, eggs and vanilla until well blended.
Combine the flour, cocoa, salt, baking soda, cinnamon and baking powder.
Gradually beat the dry mix into the sugar mixture until well blended.
Stir in the zucchini.
Pour batter in prepared pans.
Bake at 350 degrees for 50-55 minutes or until toothpick comes out clean.
Cool in pan on rack for 10 minutes.
Remove bread from pans and put on wire racks to cool completely.
