Ingredients:
3 cups
Ricotta cheese 3 eggs 3 Tbsp. vegetable oil 7 1/2 cups
flour 1 1/2 tsp. vegetable oil
Instructions:
Mix all ingredients except the 1 1/2 tsp. of vegetable oil in large bowl.
Turn dough on floured board and knead until smooth. Cover
with wax paper and let stand 10-15 minutes. Cut into
pencil thin strips and roll on floured board. Cut into
approximately 1 inch lengths and press with finger or roll
pieces down a fork. Prepare boiled water with some salt
added. Add Cavatelli to boiling water. Add 1 1/2 teaspoons
vegetable oil to water to prevent pasta from sticking together.
Once pasta rises to surface - cook for about 10 minutes in the
boiling water. The longer they cook the less gummy.
