Line a baking sheet with parchment or wax paper.
Mix walnuts and brown sugar together in a large saucepan. Sprinkle cinnamon over if desired. Cook over medium to medium-high heat. As sugar melts, use a wooden spoon to stir mixture around, making sure all nuts get covered. Cook no more than 5 minutes or until you smell sugar burning. Immediately spread nuts on the baking sheet to prevent them from clumping. Allow to cool a few minutes.
