Ingredients:
3/4 cup
granulated sugar - measure out in 1/2 and 1/4 cups 1/3
cup flour 1 dash of salt 4 eggs - separated 2 cups
milk 1/2 tsp. vanilla extract 45 Nilla wafers 6
medium bananas - ripe - sliced reserve 1 banana and 12
Nilla wafers for garnish if desired
Instructions:
Combine 1/2 cup of sugar, flour and salt in top of double
boiler.
Stir in 4 egg yolks and milk - blend well. Cook uncovered
over boiling water, stirring constantly until thickened.
Reduce heat and cook, stirring occasionally for 5 minutes.
Remove from heat - add vanilla. Spread small amount of
custard on bottom of 1 1/2 quart casserole - cover with
Nilla wafers. Top with layer of bananas. Pour about
1/3 remaining custard over bananas. Continue to layer ending
with custard. Beat egg whites until stiff, gradually
adding remaining 1/4 cup of sugar until peaks form. Spoon
over top of mixture in casserole, spreading to cover entire
surface, sealing well to edges. Bake at 425 degrees for 5
minutes or until delicately browned. Cool slightly or
chill. Before serving - garnish with banana slices, then
place Nilla wafers upright around edge of dish.
